Valentine’s Day is one of those holidays where you either love it or hate it! Valentines Day has taken on a new life with kids! I mean... Seeing them make valentines, sing songs, and spreading LOVE... how adorable is that?!! ALSO, we get to love on our husbands, wives, girlfriends, friends, boyfriends….so whats not to love about Valentines day?!!!

Happy Monday friends! I threw together this meal for the first time tonight and its definitely a keeper! Easy, not a lot of ingredients, tasty and quick!
For this recipe, I used brown rice and frozen peas and shrimp. This meal took me about 30 minutes all up to prepare and cook for (and thats including an intermission to get something for my son who came down from bed! Ha!)
I love this meal because using frozen shrimp and peas really cuts down on prep time. Rice is a super easy carb to make, and you throw it all into one pan! Also, tumeric is an EXCELLENT spice to use - there are so many health benefits to it (google it!).
Enjoy!
Easy Shrimp Paella
Ingredients:
1 cup of rice
Olive oil
1/2 tsp ground tumeric
1 cup chopped pepper (your choice what color)
1-2 cloves garlic, minced.
1 cup frozen peas
1/3 cup water
1.5 lb shrimp, peeled and deveined (I use frozen)
Salt and pepper to taste
Cilantro for garnish (optional)
Directions:
Cook rice as per directions
Heat olive oil, garlic and tumeric in a frying pan. Cook until fragrant. Add peppers.
Add shrimp and cook until no longer opaque. Add peas. Add water if needed (I had a little leftover water as the shrimp were defrosting, so I did not even need to add it!)
Mix cooked rice and mix. Simmer for 3-5 minutes.
Top with cilantro. Enjoy!

Meal Plan Monday: Peanut Tofu Rice Bowl with Avocado
It has been a minute since I shared a Meal Plan Monday, and I’ll be honest it is a HUGE goal of mine to share more recipes in this space! I know so many of you follow me not only for fashion, but also for nutrition & fitness which is why I want to share more behind the scenes of what I eat on a daily basis. My goal is to share two recipes a month, if I can churn out more, great! The hardest part is that I am a creature of habit…so writing new blog posts on recipes means I have to make new ones! ha!
I meant to make this recipe last week, but I just reverted to making pancakes for dinner because by the time I got all 3 kids to bed I was tired AF! Trust me when I say that this recipe was worth the wait! This is hands down one of my favorite recipes I’ve ever made for the first time and I’ll definitely be adding this into the rotation. Its fast, easy, and not a lot to cut up (this is key for me in my stage of life!).
Keep in mind that you definitely don’t need to use Tofu (you could totally use chicken), but I thought it would be good so I went for it!
Peanut Tofu Rice Bowl with Avocado
INGREDIENTS
1 cup cooked brown rice
1 cup shredded carrots
1 cup spinach leaves (you can use more or less! Up to you!)
1 cups broccoli florets
2 teaspoons olive oil or additional sesame oil
16 oz extra firm tofu (I used firm and it was a little mushy so I would recommend extra firm!)
1 clove garlic, minced
1 Avocado
Peanut sauce
1–2 tablespoons toasted sesame oil
1/4 cup low sodium soy sauce
1/4 cup 100% pure maple syrup
2 teaspoons chili sauce
1/4 cup creamy or crunchy peanut butter
INSTRUCTIONS
Cut tofu into small cubes. Warm olive oil in frying pan or wok. Sautee tofu until lightly browned. While tofu is cooking, whisk together the ingredients for the sauce (sesame oil, soy sauce, maple syrup, chili sauce, peanut butter) until creamy and smooth. Add sauce to the tofu bowl and let marinate while you prepare the rest of the ingredients. Cut Broccoli and mince garlic. Sautee garlic until fragrant. Add the broccoli for 3-5 mins.
Add tofu, in batches, along with the marinating sauce until crispy and golden browned, about 3-4 minutes. Add shredded carrots, and spinach. Cook until spinach begins to wilt. Add 1/4-1/2 cup water depending on how thick you want the sauce. (I used 1/4 cup)
Top with Avocado & Enjoy!

Goldfish Swim School Review: My thoughts
I’ll never forget the importance that my own mother put on my brothers and I on learning to swim when I was growing up. We religiously attended swimming lessons multiple times a week, and she always told me it was because she never learned how to swim herself. She didn’t want us to be in the same boat, so she prioritized learning to swim basically since we were babies!
Now that I’m a mother myself, I completely understand the importance and urgency of your children learning how to swim. Learning to swim, in my opinion, has to be one of the most important life skills a child can learn. Why? According to the CDC, swim lessons have actually been shown to reduce the risk of drowning by 88% in one to four year olds. From a physical standpoint, swimming is a fun, low impact way to build muscle strength and cardiovascular endurance. Ensuring your kids have all the swim skills they need to get a full body workout will make it that much easier for them to stay active. Additionally, due to the exercise during swimming, children develop their mind/body connection. This, in turn, helps kids to significantly improve their brain development and intelligence.
Thanks to Goldfish Swim School in Williamsville, the WNY community has the opportunity to give their children the gift of learning to swim and water safety in a fun, safe, interactive environment.
From the moment I walked through the doors at Goldfish Williamsville, I was impressed. The facility was extremely clean and the atmosphere is fun & tropical which is especially nice in winter. The employees are friendly, and the amenities are excellent: a fully stocked diaper station, high chairs, a bathing suit dryer, and body wash/ shampoo provided at the showers. Convenience is Goldfish’s middle name and they sure know how to make parents lives easier! They even have coloring, games and toys for siblings who might be waiting in their ever so spacious lobby.
I know from being in the service industry that your coaches are your product! Goldfish swim school doesn’t disappoint in this category (and I’m a hard sell, trust me!). The coaches are all about making the kids comfortable in a safe, learning environment. They are enthusiastic, energetic and read each child’s personality in order to see how they can help them grow as a swimmer. In addition, they always have an extra coach on deck who acts as a lifeguard. This makes me feel at ease when my sons are taking turns with the other students in the water with the coach. Knowing that there is another set of eyes strictly watching the children makes me feel so much more comfortable. Water safety is first at Goldfish Williamsville.
One of the best things about Goldfish is the feedback that we receive on a weekly basis. This was huge for me. I’ve noticed that sometimes in youth sports programming coaches avoid parents. This is crazy to me, especially when the children are under the age of 10! We are all in this together- It takes a village to raise good kids & humans! Communication is so important. At Goldfish, the coaches are confident in their ability to teach, connect and speak to not only the children, but to you as the adult/parent on a weekly basis. I LOVE how after every lesson they go over what your child is doing well, and what they need to work on. They even hand out progress reports which is so helpful. Knowing where your child stands in learning a new skill, especially if you are investing time, energy and money into it means a lot to us.
Both of my boys love coming to swimming every week and connecting with their coaches. The water is like a bathtub, which is especially great in the cold winter months! Both boys are making huge progress which I’ll be updating you all in 4-6 weeks!

Saturday Sales 1/17/19
Helloooo weekend! I’m pumped to have a weekend where I can actually enjoy myself and not be SICK lol! Also, the kids don’t have school on Monday and honestly I love days off…no rushing in the morning, packing lunch, etc. AND most of all spending extra time with the kiddos! And just like that, he's One. A letter to my last baby......
To Sammy, my sweet third baby,
You came into our lives like a whirlwind in the dead of winter, thrusting us into life with three boys aged 4 & under unplanned.
There were a lot of sleepless nights and tears (for you and me both!). Let’s be honest, its been organized chaos. And it’s been a lot of work. But is all worth it when I see you smile.
And amidst the craziness, theres been so many cuddles & so much love. And there is no doubt you have completed the trio. The three musketeers. Nothing can replace the bond I see between you and your brothers.
You made our family of five complete.
Today & this weekend, we will celebrate your first birthday. We’ll sing songs and blow out birthday candles. I’ll hug you extra close and savor this final first. I try to close my eyes and etch these moments in my mind permanently because I know they will be gone before I blink my eyes....The late nights holding you & nursing you, your gummy, toothy smile. Your giggle as you crawl away from me. Holding you on my hip everywhere I go, my sidekick. The way you snuggle into me every night. The way you look for me.
I’m the center of your world today, but tomorrow you will need me a little bit less.
Even though the years seem so far away, I know how fast the time goes by watching your older brothers. I know someday too soon, you’ll be waving your first goodbye as you leave me on your next adventure.
So, if I hold on too tightly, please try to understand. This is my way of trying to soak in all these final firsts so I’ll never forget. The final firsts and the “lasts” have already started. And I pray that some of those lasts I’ll know as they happen so I can make them last a little longer.
And while I tear up thinking about what I’m leaving behind, Your smile and laugh reminds me that I have so much to look AHEAD to rather than looking back. So as this chapter closes, I’ll be crying and dying a little bit inside. But I’ll also be smiling tears of joy for the next one because it’ll be just as beautiful, just in a different way.
Thank you for being everything I didn’t know I needed. Thank you for being the glue in our family. Thank you for being the third boy to balance out our trio.

2020: Words of the year
Happiest of New Years to all of you! I meant to have this post up the first few days of January but life happens! We were on vacation, then we got home and we were all hit with the flu. I am JUST starting to feel like a human again! 2020 sure has been a ride ((already!))
I love the fresh start of a new year, especially after the holiday period. The holidays are so amazing but they are also so exhausting at the same time! Its nice to have January to reflect, reorganize, refocus, RELAX, and declutter!
I think every year there is this pressure to make yourself into a super woman at the start of the new year. I do think its great to have goals to shoot for-BUT remember that everybody is in a different space in life and sometimes just BEING is enough.
We can all get caught up in wanting to do more, and be more, achieve more literally 24-7 without just enjoying and being in the moment. We don’t appreciate who we are in this very moment because we are so busy trying to become “better” or “conquer” the next best thing. Which …to be honest…makes you miss a huge part of life!
Sometimes its ok to just BE what we are. To relax and do “nothing”. I know one of my goals for 2020 is to just BE in the moment, enjoy the progress that I’ve made as a person and to just relax. You don’t always have to go, go, go to make steps forward! Appreciate the journey, and take a deep breath before moving forward again.
I’m doing things a little bit differently this year. I’ve selected a few words of the year through which I’ve tied goals to.
For those of you who would also like to have a word of the year, here are a ton of them to give you some ideas.
How do you choose a word? Here’s some tips:
Ask yourself what do you need in life right now?
Think about traits that are important to you
Think about this past year and anything you want to keep/change.
Make a list of words that resonate
Don’t overthink it!
My words:
Fulfilling: My biggest one this year is Fullfillment. Does _____ give me fulfillment? If it doesn’t, it doesn’t belong in my life. End of story.
Memories: Creating and making memories is high on my list this year. Too often we can get caught up in “doing” so much that we really aren’t living life!
Discipline: Discipline is honestly the key to so much in life! It’s the difference between what you want that very moment and what you want most!
Balance: My last word is balance. I think this is something we are ALL striving towards in life. Balance between work & family life…balance between motherhood and holding on to the individual person that you are. The list could go on and on. And while sometimes i think balance is something that is sooo hard to achieve, I’m still going to try and do my best to get there!
Balance:
Just BE more. Be content with everything and anything. Its so easy nowadays to want more: success, happiness, health, etc. Slow down, enjoy the moments. Slow down for my mind. For my kids. For my health and my body! Of course I’m not saying be this way every day (impossible) but every now and again. relax. Breathe. Fight the voice that is telling me to “do”. Celebrate who I am and what I am and what I’ve accomplished for once before taking the next step forward!
Discipline:
Run double digits every week (10 miles or more). Run a half marathon. Wake up earlier: Honestly I would love to be up at 5 am every day. This really hasn’t been feasibile this past year because, hello, newborn…but I’m hoping 2020 is all about sleeping through the night so I can get into a schedule & rhythm! Routines: Get back into a REAL routine with the kids. Sure, I’ve had a routine with the boys over the last year…but to be honest its been ever evolving based around Samson’s schedule. Any addition to a family is a huge change to the dynamic, but three was mind. blowing. at times! The first 6 months were really hard, especially when I’m on my own at bedtime a few nights a week. I’m excited because I feel like through this next year we are going to be able to really settle into a longer term routine and I’m vowing to make time for more reading, more prayers, and more baths now that the ever exhausting first year of baby is done.
Memories
Buy less things & travel more. I’m currently doing a #nospendjanuary that hopefully will spill over into February :) So far, so good! Lunch helper at school: continue to commit and spend the time to be at my son’s lunch! its so special for him and he (and I) look forward to it! Now that we’re more mobile, find more interesting and fun things to do with all three kids to make memories.
Fulfilling
Be at church more: even if I miss out on half of what the sermon is because the baby…or the older kids want a snack! Community Service: Take the time to do some sort of community service with my older two sons . Spend time doing things I LOVE like being outside, being with my family & kids, working out, and blogging.
Those are just a FEW of the “goals” that I have for the year, obviously I have others that are more traditional and apply to my family, to my work/ family businesses, to my blog/instagram & brand, etc. !
I hope this served to inspire you in some way shape or form to organize for the upcoming year!

Women's Gift Guide!
Happy last weekend before Christmas friends! Its gonna be a busy one if you’re anything like me! I’ll be preparing for my husbands birthday all morning and wrapping for our family gift exchange tomorrow. Its always chaotic doing it early but makes Christmas eve so much more relaxed! It also spaces out the gift giving too for the kids which is awesome!
I’ve got a ton of wrapping to do (going to start that this morning …ugh….and although this gift guide is a week or so late…better late than never! Our yearly tradition: Picture Christmas cards with Basic Invite

Monday Meal Plan: Turkey Bolognese
Turkey Bolognese
Happy Monday friends! Wanted to hop on and share this awesome cold weather & family friendly recipe that is fast and easy…and also healthy!
A couple of notes- you can swap out the turkey for beef, and if you want to go lower carb, you can switch out the pasta for spaghetti squash or zucchini noodles. BUT if you remember what I said earlier…Carbs are not bad. I eat it with pasta! I just make sure I eat it on a day I am more active :)
Most stores have the mirepox already made & canned peas means easy peasy with 3 kids. I put the red pepper flakes on when I have dished the meal out because red pepper flakes + kids = no bueno! Ha!
Ingredients:
Ground Turkey
Olive oil
2 cloves garlic
Pasta of your choice
Zucchini (2-3)
Mirepox (I think you get this at Wegmans already made-but basically its onion, carrot & celery. Super easy!)
1 small can Tomato paste
1 & 3/4 cup Vegetable broth
Can of peas (I use about 1/2 the can)
Red chile flakes to taste
Directions:
Bring a medium sized pot of water to boil. Add pasta and cook until tender. While the pasta cooks, prepare the turkey bolognase.
Chop and mince garlic. Cut the zuchinni into half moons.
In a frying pan, warm oil. Add mirepox, and cook until soft. Stir in garlic and cook until fragrant. Stir in tomato paste and cook until carmelized. Add turkey and cook until lightly browned but not yet cooked through. Add vegetable broth and zucchini, stirring until turkey is cooked through and zucchini is tender. Add the pasta and peas.
Remove from heat. Season to taste with red pepper chile flakes.

Pre Black Friday / Saturday Sales!
Hi friends! Happy weekend! We just got back from a long saturday morning walk and I just put the baby down for his nap! It was soooo cold on our walk but I refuse to let cold weather keep us from being active! I can’t believe its November and its in the 30s already. I’m praying this means that spring will be here early this year? #hopeful
We don’t have any major plans this weekend and I’m not mad about it! I love just getting things done around the house especially this time of year!
