½ onion chopped
2-4 cloves garlic (we like garlic so we use 3 or 4)
1 package of Ground Turkey or Ground Beef
3 stalks celery, chopped
2 carrot sticks, chopped
½ green pepper chopped
½ red pepper chopped
1 can of crushed tomatoes
1 small can of tomato paste
Spaghetti squash/ or whole grain pasta
Notes: You can use either turkey or beef. If you choose beef I recommend getting 92 % lean or higher. You can omit any of the veggies if you want, we like to get as many in the dish as possible!
- Preheat oven to 400 degrees. Cut spaghetti squash in half. Scrape all of the seeds and strings into garbage until squash is clean.
- Place face down on cooking sheet lined with foil. Place foil on top of each half. Cook until rhine is soft.
Stir fry Onion and garlic in frying pan. Add mushrooms, carrots and celery when onion and garlic start to brown.
Add green and red pepper. Add meat and cook thoroughly.
Pour container of crushed tomatoes and stir. Add container of tomato paste and mix until smooth.
Add a taste of Rosemary, Italian herbs, Salt, Pepper and a tablespoon of ketchup.
Stir and let simmer for 3-5 minutes. Serve over whole grain pasta or spaghetti squash.
