Happy Monday people! Errr…wait..its Wednesday. I’ve been completely out of commish. after being sick so apologies this is going out today and not on a Monday! lol!
Hope you all had a good start to the week. I’m hopping on to share a stir fry recipe that we enjoyed over the weekend! I love stir frys because its such an easy way to get protein, carbs, veggies in.
I love this particular recipe because you don’t need a lot of different ingredient (the less I need to buy, the better…who’s with me?!), its easy to make and its relatively fast! It isn’t spicy either so it is definitely kid friendly.
Beef & Vegetable Stir Fry
2 Tbs cornstarch
1/4 cup reduced sodium soy sauce
2 tbs rice vinegar
1 tsp salt
3 garlic cloves
Steak of your choice
Yellow and red pepper, cut into strips
Rice of your choice
Whisk together cornstarch, soy sauce, minced garlic (2 cloves), rice vinegar, and salt (if desired) in bowl. Add steak and marinate for 15-20 mins (while you prepare vegetables) in fridge.
Cut broccoli, red/yellow pepper, and mushrooms.
Heat oil in saucepan and add garlic and mushrooms. Once browned, add pepper and broccoli.
Once vegetables are cooked, remove and put in bowl. Using same pan, add the marinated meat to pan. Add oil if necessary. Once browned add vegetables back in and cook!
Complete cooking rice and place in bowls. Top with the meat and vegetable mix and enjoy!
